Bread, Muffins, Biscuits and Pastry

Bette Lemke's Muffins

Pour 1/2 cup of boiling water over 1/2 cup raisins and set aside to cool.

Mix:

1 cup whole wheat flour
2 1/4 cups oat bran
1 Tablespoon baking powder
1 tsp. baking soda
1 tsp. cream of tartar
1 tsp. cinnamon or nutmeg

Beat:

3 egg whites
1 cup skim milk
1/4 cup applesauce

Stir the wet ingredients into the dry. Add raisins and enough water to make batter of desired consistency. Stir until just moistened and bake batter for 20 minutes at 350 degrees. Make 12 medium muffins.

Note: Thick batter will make chewy muffins while thin batter will make cake-like muffins.

Options: Use whole eggs if you want to energize your children. Sunflower seeds, nuts, chopped apricots or carob chips may also be substituted in the batter.

Teething Biscuits for Babies

2 Tablespoons honey
2 Tablespoons molasses
2 Tablespoons oil
1 egg yolk, beaten
1 teaspoon vanilla
1 Tablespoon soy flour
1 cup w.w. flour
1 Tablespoon wheat germ

Blend together first 4 ingredients; stir in vanilla, flours and wheat germ. Dough should be stiff. Roll dough 1/4 inch thick. Cut in rectangles 1" x 1 1/2". Place on ungreased pan and bake at 350 F. about 15-20 min. Yields 4 dozen cookies.


Ding Watson's Combat Bread

2 cups warm water
2-3 Tbsp. honey
2 pkg. yeast
2-3 cups whole wheat flour
2 tsp. salt
2 Tbsp. soya flour
1/4 cup sunflower seeds
1/4 cup sesame seed
1/4 cup rye flour
1/4 cup corn meal
1/4 cup millet
1/4 cup cracked oats
1/4 cup soy, oat or rye flakes

Add honey and yeast to warm water. Let sit. When foamy add whole wheat flour and beat well (about 100 strokes). Add salt and soya. then add all the rest of the ingredients. Butter 4 small pans, sprinkle with corn meal. bake 35-40 minutes in 400 degree oven, longer if in pans.

This is quite a flexible recipe. I often add a few Tbsp. of gluten flour when I am first beating the whole wheat flour. Two cups of flour are often enough. It is more like a batter than a bread dough when you put it in the pans. I usually also add flax seeds, often ground flax seeds.


Date and Nut Loaf

Combine and cook, stirring constantly until thickened:

3/4 c. water
1 1/2 c. chopped dates

Cool. Set aside.

Mix together:

2 c. organic flour
3 tsp. baking powder

Stir in:

1/2 c. chopped nuts (walnuts or pecans)

In a small bowl beat together 1 egg, 1 c. milk (or soy or rice milk), 1/4 c. oil Add date mixture and liquids to flour/baking powder mixture. Mix well with a wooden spoon. Pour into a greased loaf pan. Bake at 350 F. for 60 to 70 minutes.


Carob Nut brownies

1/2 c. butter or oil
1/2 c. honey or less
2 eggs
1 tsp. vanilla
2/3 c. w.w. flour
1/3 c. carob powder
1 tsp. baking powder
2/3 c. sunflower seeds

Cream butter (or oil) and honey; beat in the eggs and vanilla. Stir together dry ingredients. Blend into creamed mixture. Stir in sunflower seeds (or chopped peanuts or walnuts) if desired. Turn into an oiled 8" x 8" square cake pan. Bake at 350 F. for 20 minutes.
