Mushroom Rice Casserole

Have about 3 c. cooked brown rice available. Saute lots of sliced mushrooms, leeks, celery, green and red peppers, etc. in cold pressed olive oil. Mix with rice and add a can of corn kernals and a handful of chili powder. Set Aside.
In a hot dry skillet (no oil) fry corn tortillas a minute on each side. Oil bottom of a deep round baking dish. Layer tortillas, rice-veggies mixture, grated old cheedar cheese. Top layer should be cheese. Bake at 350 F for 50-60 minutes.
