Leek and Potato Soup
6 cups chicken stock or your favorite soup stock
2 leeks, chopped, white part only
1/2 cup chopped onion
4 potatoes, diced
salt, pepper to taste
1 cup 2% milk, homo or creamilk
chives or parsley to garnish
Combine the ingredients up to and including the salt and pepper in a large pan. Bring to a boil. Cover and simmer for 30 minutes. Run through a blender, if desired, then return to the saucepan. Stir in creamilk or creamy milk. Heat carefully. Serve with garnish, if desired. Makes 8 cups.
