Tabouli
1 cup cous-cous
water
1 - 3 large bunches of parsley
4 green onions or 1/2 regular onion, minced
1/4 cup fresh mint or 2 Tbl dry
1/2 green pepper, chopped
2 large tomatoes, diced small
1 1/2 tsp. salt
1/4 tsp. pepper
1/3 cup lemon juice
1/4 cup olive oil
Wash parsley, shake well & drain. Soak cous-cous in boiling hot water for 2 minutes, drain well and cool. Remove parsley stems and chop fine (a food processor works great here). Add to wheat.
Mix all ingredients together, toss well and serve immediately. (Notez bien: If you don't plan to serve immediately, don't add onions and tomatoes until time to serve.)
Scoop up with romaine lettuce leaves or pita bread.
